Condensed milk is a thick, sweet dairy product produced from cow’s milk with a long shelf life. The terms condensed milk and sweetened milk are synonyms. Condensed milk is produced by removing the water in the milk and then adding sugar. The result of this process is a sweet, viscous liquid. During the production of condensed milk, any harmful microorganisms are killed through a process of heating. This process also decreases fat separation and inhibits oxidation. Unsweetened condensed milk is also available.

The advantage of condensed milk is that it has a very long shelf life. Because of the sugar content and the fact that it is packaged in a can, it does not require the same kind of refrigeration as many other dairy products (as long as it remains unopened). The sucrose in the sugar increases the liquid’s osmotic pressure and therefore prevents the growth of microorganisms.

The Market
The market for condensed milk is focussed primarily around Asia and Africa. The third world is a stable market for condensed milk. Condensed milk is also used in desserts in many countries. Finally, it is used in the production of sweets and as a substitute for milk in tea and coffee.
